- 2 lbs boneless skinless chicken breasts
- 1 cup chopped onions
- 1 large red bell pepper, chopped (about 1 ½ cups)
- 4 medium cloves garlic, finely chopped
- 1 can (15.25 oz) whole kernel corn, drained
- 1 can (15–16 oz) great northern beans, drained and rinsed
- 1 (16 oz) jar 505 Hot Green Chile Sauce (or your favorite taco sauce)
- ½ cup chicken broth
- ½ tsp salt
- 1 Tbsp cumin
- 1 tsp coriander
Garnish:
- Fresh cilantro or parsley
- Non-fat Greek yogurt or regular sour cream

🥣 Instructions
- Spray a 3–4 qt slow cooker with cooking spray.
- Cut chicken breasts in half lengthwise, then slice crosswise into chunks.
- Add chicken, onions, red bell pepper, garlic, corn, beans, green chile sauce, chicken broth, salt, cumin, and coriander to the slow cooker. Stir well to combine.
- Cover and cook on low for 6–7 hours.
- Stir well before serving.
