  1. Spray a 3–4 qt slow cooker with cooking spray.
  2. Cut chicken breasts in half lengthwise, then slice crosswise into chunks.
  3. Add chicken, onions, red bell pepper, garlic, corn, beans, green chile sauce, chicken broth, salt, cumin, and coriander to the slow cooker. Stir well to combine.
  4. Cover and cook on low for 6–7 hours.
  5. Stir well before serving.
  6. Garnish with fresh cilantro or parsley, add a dollop of Greek yogurt or sour cream, and serve with crunchy tortilla chips on the side.
